Cake Mix Cookies

I love baking from scratch – stand firmly by it. Things ALWAYS taste better from scratch.

(Except for brownies. Try as I might, I CANNOT get my brownies to taste as delicious as a box mix does. It’s extremely upsetting. I’ll keep trying.)

However, today when I was craving cookies and decided I’d make some, I was surprised to find my cupboard bare of flour! I recently got married and we’re still trying to rebuild our pantry. It seems flour is one of the things I haven’t got around to restocking.

I had a cake mix though. Isn’t there a way to make cookies from  cake mixes? I was almost confident there was.

After some browsing through several links on Pinterest, I decided to try my hand at it. This seemed to be the most common way, and I was very pleased with my results!

The best things about cake mix cookies are that they require very little effort and/or ingredients, and you can use any cake mix and add in almost anything you want! For my cookies today, I used a devil’s food cake mix and added in chocolate chips (no such thing as too much chocolate!) and marshmallows.

  • 1 box cake mix, any kind
  • 1/3 cup melted butter or oil
  • 2 eggs
  • 1 tsp vanilla

Preheat oven to 350.

Mix together well and add in any “extras” that you want: chocolate chips, candy pieces, marshmallows, sprinkles, nuts, etc. I used a regular sized spoon to portion out my cookie dough onto the baking sheet. Make sure to grease your pan or use a silicone baking mat!

Bake for 7 minutes at 350 degrees F. Enjoy your easy treat!
