For today, though, I wanted to share a recipe near and dear to my college student self. Say hello to eggless cookie dough!
I know eggless cookie dough is something of a trend now. Have you heard about this place in NYC? But I discovered eggless cookie dough an entirely different way.
As a freshman in college just a measly four years ago, I realized there are reasons my parents always prevented me from doing certain things, things like, say, attempting to eat an entire bowl of cookie dough on my own.
Bad idea. Upset stomach all weekend. Keep your raw cookie dough sampling to a spoonful, friends!
Thankfully, there is a solution when what you really want is cookie dough – not cookies. My roommate Camille came to my rescue after my unfortunate raw dough binge, and I’m here to pass on the favor to you.
This recipe has no eggs, and is therefore totally safe to eat! Camille and I ate our fair share freshman year. It’s super quick to put together, so it’s a perfect treat for a busy day or for fuel for an intense study session. And it’s chocolate peanut butter, which is only the world’s most perfect food combination.
Couple of notes: you NEED softened butter. Otherwise the texture for the cookie dough will be all wrong. I’m talking room temperature butter, not melted. Your dough will be all oily. Unsoftened/cold butter means your sugar and butter won’t cream properly and your dough will be all grainy.
Also, mix ins are totally optional but I’d HIGHLY encourage them! Hello chocolate chips, white chocolate, and peanut butter cups. Yes please!
I’m sure this recipe would be perfect to mix into ice cream or to incorporate into other cookie dough themed desserts, but I’ll be honest – I’m really just eating it by the spoonful. Go right ahead. You can too 🙂
Eggless Peanut Butter Cookie Dough
Time: 5 min
Yield: PLENTY for four people, adequate for six!
- 1/2 C butter, softened
- 1/2 C brown sugar
- 1/3 C sugar
- 1 C flour
- 1/4 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 C peanut butter
- Chocolate chips/peanut butter cups (optional)
- Cream together butter and sugars until light and fluffy.
- Beat in peanut butter and vanilla until well incorporated.
- Beat in flour, baking soda. and salt.
- Stir in chocolate chips and/or peanut butter cups if desired.
