Another post recipe devoted to end of summer fruit! Yay 🙂
Everyone knows that August is the time when everybody’s got too many zucchinis. Living in an apartment without space for a garden, I miss that problem! So when Ty and I went home to visit my parents a couple weekends ago and one of their neighbors was pawning off zucchinis on whoever wanted to pick them, I jumped at the chance! Fresh zucchini is my jam 😀
And they’ve been a joy to have in my kitchen! I’ve had fun coming up with new and creative ways to eat it. Current favorite: cheesy zucchini! Inspired by this recipe from Simply Delish Eats, this is my go-to zucchini dish. But I also engineered some fantastic roasted zucchini fajitas as well as an over-easy egg topped breakfast dish that was just SO yummy 🙂
With all this zucchini, though, of course, you have to make some zucchini bread. I don’t know about you, but I’ve always found it kind of sad and disappointing that a treat named after a vegetable (or fruit, whatever) is so unhealthy! I mean, do you know how much sugar can go into these deceptively healthy sounding loaves? I’ll give you a hint – it’s NOT a healthy amount!
So my quest this zucchini season has been to develop a healthy-ER zucchini bread recipe that I can eat relatively guilt-free that’s still the delicious spiced moist (sorry guys, I’m a fan of the word moist when it comes to baking. You just can’t say wet or damp and convey the same message about your cakes or breads) treat I love. And I think I’ve got it!
The key is to keep JUST a touch of sugar for sweetness, and I opt for brown sugar because it helps keep that crisp edge and I just really like brown sugar, while replacing the rest of the sugar and oil with unsweetened applesauce. The applesauce lends moisture and the rest of the sweetness to the bread. Of course, the chocolate chips add some sweetness too 😉 If you really want to make this healthier, go ahead and leave the chocolate out, but I really love the little chocolate pockets they add throughout the loaf. But I’m just a chocolate fanatic, so go figure.

Healthier Chocolate Chip Zucchini Bread
- 1 egg
- 1 C shredded zucchini (fresh or frozen and squeezed)
- 1 and 1/2 tsp vanilla
- 3/4 C unsweetened applesauce
- 2 Tbls brown sugar
- 1 C flour
- 1/2 C wheat flour
- 1 and 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/8 tsp baking powder
- 1/2 tsp salt
- 1/4 C semi-sweet chocolate chips
- 1/2 C chopped walnuts (optional)
- Preheat oven to 350 degrees Fahrenheit.
- Use a fork to whisk eggs and zucchini together.
- Mix in vanilla, applesauce, and sugar.
- Add flours, soda, powder, and salt and stir until just combined.
- Stir in chocolate chips and nuts, if using.
- Grease and flour a loaf pan.
- Pour batter into prepared pan and bake for 1 hour.
