Banana Bread Oatmeal

So I’m not super great at eating breakfast in the morning. Usually because I’m running behind and breakfast is not high on my list of priorities – it falls somewhere after getting my hair done and making sure I have everything I need for class. Honestly, even making my bed trumps getting breakfast.

However, this is one of my go-tos when I do make time for breakfast, ESPECIALLY in cool weather. I’ve never been able to really get on the overnight oats train – oatmeal should be warm and cozy and this banana bread-inspired oatmeal is everything I want on a cold morning.

And the great thing about this oatmeal is that it’s sweet but still healthy! Lots of sweet breakfasts are too sweet for me early in the morning and honestly it would have as much health benefits to eat a cupcake as it would to eat oatmeal or a muffin or french toast. SO. MUCH. SUGAR. And then I’m just hungry by like 10 o’clock anyways.

But this is perfect because it’s sweet without being overly sweet and and keeps you full until lunchtime! And it’s good for you ๐Ÿ™‚ I don’t think it needs any added sugar because the banana sweetens it perfectly but if you want, go ahead and add a drizzle of honey and that’s delicious too and still better than a refined sugar.

So to maximize the banana flavor and get that banana bread flavor you’ll cook your oats twice – the preliminary cook with the oats and liquid and the second cook with the banana and nuts stirred in.

Of course, it goes without saying that like with actual banana bread, a super ripe banana is the best here! Really, the riper the better. All that yummy banana flavor ๐Ÿ™‚

The recipe I’ve provided makes just one bowl of oatmeal but go ahead and double or triple or quadruple the recipe for the family. Cooking times just may need to be adjusted.

Now go cozy up with a bowl of oatmeal! You could be enjoying it in just a couple of minutes ๐Ÿ™‚

Banana Bread Oatmeal

Time: 5 minutes

Yield: 1 serving

Ingredients

  • 1/2 C oats
  • 1/2 C milk
  • 1/2 C water
  • 1/2 tsp cinnamon
  • dash of salt
  • 1 banana, sliced
  • 1/2 oz chopped walnuts

Directions

  1. Put oats, milk, water, cinnamon, and salt in a microwaveable bowl.
  2. Microwave for 2 minutes.
  3. Stir in banana slices and walnuts.
  4. Microwave 1 minute.
  5. Stir in a touch of honey if desired.
